BREMNER WAFERS CLEANSE THE PALATE AT THE 18th ANNUAL FOOD & WINE CLASSIC AT ASPEN
ASPEN, CO - On Friday, June 9th through Sunday, June 11th, Bremner Biscuit
Company of Denver presented its full line of gourmet wafers at the 18th Annual
Food & Wine Classic at Aspen. Amidst over two hundred booths featuring the
world's finest wines, the Original Bremner Wafer expertly cleansed
the palates of attendees with its neutral flavor and delicate crunch. Among the
other crackers sampled were the Cracked Wheat, Sesame,
Low Sodium and the Caraway, the newest
addition to the Bremner family of quality wafers.
BREMNER WAFERS BRING THE CRISP BACK INTO THE CRUNCH AT IACP INFORMATION FAIR
On Saturday, April 1st Bremner Biscuit Company of Denver, Colorado presented
their line of premium quality wafers at the 22nd annual International Association
of Culinary Professionals' Information Fair in Providence, Rhode Island. The
Original Bremner Wafer, took center stage when attendees sampled the
cracker with wine to experience how its neutral flavor exhibits the talent of
cleansing the palate before tasting another wine. For this reason, the Bremner
Wafer is the official cracker for the Bon Appetit Wine & Spirits Focus 2000-2001
tour and the cracker of choice for the Wine Enthusiast Magazine tasting panel.
Among the other crackers sampled were the Cracked Wheat,
Sesame and the new Caraway.

The aromatic caraway seed originates from an herb in the parsley family. With it's nutty,

BREMNER BISCUIT COMPANY SPONSORS RECIPE CONTEST AT COOK STREET SCHOOL OF FINE COOKING
Denver, CO - Students at Cook Street School of Fine Cooking gave cheese a run for
its money as a cracker's best friend when Bremner Biscuit Company of Denver asked
them to develop signature recipes using the Bremner line of premium crackers. On
Thursday, March 2, 2000, ten students in Cook Street's Professional Food and Wine
Career Program presented their original recipes featuring their choice of
Original, Caraway, Sesame or
Cracked Wheat Bremner Wafers. Twenty recipes were tasted by a
panel of four judges including Teresa Farney of the Colorado Springs Gazette, Kate
Bailey of Mountain Living Magazine, Suzie Roser of Tony's Meats and Bremner Biscuit
Company's own Chelle Mollohan. The recipes were judged on taste, presentation and
creativity. From Caraway Stuffed Mushrooms and Roasted Chicken with Morel Stuffing
to Gorgonzola Cream Cheese with Raspberry Sauce, the versatility of Bremner Wafers
was artfully and deliciously showcased.
Cook Street student Cathy Bacon was awarded grand prize for her Salmon Mousse En Crust,
a light and airy mousse in a flaky Bremner Sesame Wafer crust, served with English
cucumber slices on Bremner Sesame Wafers. "The sesame cracker is just the right
consistency to create the crust," said Bacon. "And the hint of sesame is the perfect
complement to the salmon."
The judges also selected one winning recipe for each of the four wafer varieties
in the competition. Bacon's recipe for Stuffed Baby Zucchini (hollowed zucchini stuffed
with peppers, mushrooms, onions, Bremner Caraway Wafers and Gruyere cheese)
was awarded first prize among the Caraway submissions. Classmate Terri Fennell was awarded
first place in both the Cracked Wheat and Original categories
for her Toasted Four-Cheese Ravioli (baked ravioli coated in Bremner Cracked Wheat
Wafers) and Roquefort Stuffed Pork Chops (pork chops stuffed with a mixture of onions,
mushrooms, Bremner Original Wafers and Roquefort). Bremner Biscuit Company
presented Cook Street School of Fine Cooking with a check for $1,000 to be distributed
among the winners. The grand prize recipe was also featured on KUSA Channel 9's "News at 4"
on Monday, March 6th.
The Cook Street students are in their final month of culinary study in Cook Street School
of Fine Cooking's professional program. After graduation many of the students will continue
their training during three weeks of travel and education with Cook Street's study abroad
program in France and Italy.
BREMNER WAFERS DEEMED KOSHER AND PAREVE BY THE ORTHODOX UNION
DENVER - The Bremner Biscuit Company of Denver, Colorado adheres to the requirements
established by the Union of Orthodox Jewish Congregations of America in the
manufacturing of a selection of it's quality crackers. Under the supervision of the
Kashruth Division of the Orthodox Union, Bremner Caraway Crackers,
Cracked Wheat Wafers, Sesame Crackers,
Original Wafers and Low Sodium Wafers have been certified
as kosher and pareve through February 28, 2000, and will then be subject for renewal.
These products display the O.U. symbol on their respective packaging, signifying
kosher and pareve certification.
"Kosher" is derived from the Hebrew word kasher, meaning "proper" or "pure."
According to kosher dietary laws, animal foods may not be consumed with dairy
foods during the same meal. Pareve is a Jewish term describing food made without
animal or dairy ingredients. Pareve products can be consumed with either dairy or
meat products, according to Jewish law, because they are made with vegetable oils,
not butter or animal fats.
IN MEMORIAM: EDWARD G. BREMNER DIES AT 98
Bremner Biscuit Company is sad to announce the passing of Edward G.
Bremner, grandson of Bremner Biscuit Company founder David F.
Bremner. Edward G. Bremner died at his Winnetka, IL home at the age
of 98. Three daughters, Marion Spencer, Catherine Ready and Barbara
Anderson; a son, Edward Jr.; 20 grandchildren and 53
great-grandchildren survive him. His wife, Marion Miller Bremner
predeceased him.
Edward G. Bremner was in the third of five generations to head the
family's business, now owned by Dare Foods of Canada. His grandfather
David F. Bremner began baking bread and serving it to the needy after
the Great Fire of Chicago in 1871. The D.F. Bremner Baking Company
eventually expanded into baking cookies and crackers. In 1984, the
family relocated the Bremner Biscuit Company to Denver, Colorado
where it remains today. Edward retired as president in 1969. His
grandson Neil Bremner now heads the Bremner Wafer baking operations
for Dare Foods. Throughout his career and during his retirement,
Edward volunteered as an accountant for Catholic Charities. He also
was an avid world traveler who spoke six languages.
